Blood Sugar Balancing Gluten-Free Brownies

This week I wanted to share a recipe for Fudgy Gluten-Free Brownies. These are just as delicious as traditional gooey brownies but are made completely with almond flour and no nasty sugar to make you crash. It can easily be made paleo, nut and/or dairy-free.

Staying well & keeping your blood sugar levels balanced doesn’t mean you can’t have any fun. Have a free meal each week and for the other 6 days choose healthy yummy treats like our brownies.

Brownies come in a multiplicity of formations and shapes, everyone who bakes brownies has their own particular twist on constructing the perfect one in their eyes. You can get fudgy chocolate brownies or cakey brownies, what you enjoy is down to you and the baker creating them. We always recommend going without gluten!

Ingredients

  • 1 cup almond flour (swap this for coconut or any other gluten-free flour if you need to)
  • ¼ cup monk fruit sugar
  • 1/3 cup raw cacao powder
  • 2 large organic eggs
  • 3 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt

Garnish your brownies with fresh strawberries, raspberries or blueberries & mint leaves.

Serve with 1-2 tablespoons of coconut yoghurt.

Instructions

  • Preheat the oven to 180ºC and line an 8-inch square pan with baking paper.
  • In a big bowl, combine the almond flour, monk fruit sugar, cacao, eggs, oil, baking soda, vanilla, and salt, and mix well to form a thick batter.
  • Transfer the batter to the ready 8-inch pan, then use a spatula to press the batter evenly into the base of the pan.
  • Bake at 180ºC for about 25 to 30 minutes until the edges of the gluten-free brownies look dry and the centre of the pan doesn’t jostle too much. Your gluten-free brownies may puff up slightly in the oven and then deflate as they cool.
  • Keep in mind that gluten-free brownies retain heat well, so let them cool for 30 minutes before enjoying.

I find these to be an afternoon or that time of the month God-Send for I can have with a cup of tea or coffee & I’m really satisfied, without the blood sugar crash, so I can finish my day strong.

Brownies are not classified as cakes – this is a very interesting point about the brownie. The reason for this is because although the texture is similar to cakes, it is classed as finger food (whereas usually cake is eaten with a fork), therefore they are categorised as a cookie bar…
