Gluten-free banana & blueberry bread

This Banana & Blueberry Bread Recipe evolved from a banana bread recipe I created many years ago to help with my afternoon cravings. Yesterday my daughter Isabella took this recipe to a whole new delicious level and added blueberries and garnished with fresh mint leaves – delicious!

Banana & Blueberry Bread Recipe

Mix together the dry ingredients:

  • 250g almond flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg.

In a separate bowl, whisk together the wet ingredients for the Banana & Blueberry Bread:

  • 2 organic eggs
  • 1/4 cup of unsweetened plant milk 
  • 1/4 cup of Birch xylitol or stevia or coconut sugar (if I make the banana versions, I often don’t add this – so see what you prefer).
  • 1 grated apple with skin.

Mix The Ingredients, Bananas & Blueberries

Mix the wet ingredients with the dry ingredients.

Add 1-2  ripe bananas (smashed with a fork)

Add 1 cup of blueberries 

Mix gently so as not to smash the blueberries

Add 1/2 cup of walnuts to garnish too if desired

Place into a bar tin and bake at 180 degrees for 20 – 30 minutes.

Once cooled garnish with fresh mint leaves.

Enjoy a slice any time of the day with a cuppa and you may even choose to serve with a dollop of vegan coconut kefir yoghurt as an extra treat.
